Main Ingredients
- 20 g dried wood ear mushrooms (or 120g fresh wet mushrooms)
- 2-3 garlic cloves
- 2 Thai chili peppers
- 2 g salt
- 5-10 g sugar (to taste)
- 15 ml light soy sauce
- 15 ml vinegar
- 5 ml sesame oil
- about 2cm mustard (optional)

Prepare the Mushrooms
- Soak dried wood ear mushrooms in about 400ml water for about . (Skip this step if using fresh wet mushrooms)
- Remove roots from the soaked mushrooms and wash thoroughly.

Cook the Mushrooms
- Bring water to a boil in a pot.
- Add the mushrooms and cook over high heat for 1.5-.
- Drain the mushrooms and set aside.

Make the Dressing
- Chop garlic cloves and Thai chili peppers, then put them in a medium-large bowl.
- Add salt, sugar, light soy sauce, vinegar, sesame oil, and mustard (if using) in the amounts listed above.
- Add the drained mushrooms to the bowl.
- Mix well and serve.

Notes
You can use fresh wet wood ear mushrooms instead of dried ones, but make sure they are fresh.
